Baked Berry Cheesecake

Ingredients:
250g Quark or ricotta
200ml creme fraiche
3 large eggs
4oz demerara sugar
mixed berries, enough to cover bottom of dish. (I used raspberries and gooseberries)
pinch or two of mixed spice
enough shortcrust pastry to line a 9 inch pie dish.
Method:
Grease and line dish with pastry. Beat eggs with sugar and spice (and possibly all things nice). Beat Quark and creme fraiche together, then beat egg mixture into it. Place fruit into pie dish and pour over the egg/Quark mixture. You will probably have a small amount left over!
Bake in the centre of the oven at gas mark 4 until set and golden brown. Allow to cool in dish. The cheesecake will sink and maybe crack a little, which seems to add to its appeal!
